Honestly? I would probably not put this into my regular rotation for my weekday breakfasts - it makes a lot, and while I could scale it down, I'd rather not. It's also a little too much work for me for a standard weekday breakfast. This is a great option for brunch or holidays or a weekend with friends when you don't want to be a short order cook. It's hearty and delicious.
Ingredients
1 lb bacon, chopped, cooked, drained
1 small onion, diced
1 orange bell pepper, diced
4 green onions, chopped
20 oz bag of Simply Potatoes shredded hashbrowns - I used southwest
8 oz shredded cheese
9 eggs, beaten
1/2 cup milk
Directions
Preheat oven to 350. Spray the bottom of a 13x9 pan with cooking spray, arrange potatoes in a thin later on the bottom, and bake them off for about 10 minutes.
Cook bacon and drain (see my grease trick below). Add onion and pepper to the pan and saute for about five minutes.
Beat eggs and milk together, and add salt & pepper to taste.
Remove potatoes from oven. Layer cheese, bacon, green onions. Pour eggs mixture over. Top with the remaining cheese and green onions.
Cook for about 40 minutes, then hit it with the broiler for an additional five.
Line a bowl with tin foil, place strainer over it, and drain bacon into the bowl. Much easier cleanup when the bacon grease hardens. |

ReplyDeleteI make a version of this in the crockpot, but pretty much only during football season when the boys are over to watch games. Otherwise it really is just too much food. It is delicious though! I just pick the bacon out of mine and give it to Hawkeye ;)
ReplyDeleteNINE EGGS. Damn. That's what always gets me with breakfast food. I really like eggs and I order them/make them a lot, but I can only eat one or two before I start to feel sick. Almost every breakfast casserole I come across calls for seven dozen eggs and I'm like, "Whoa. That'd probably kill me." Hahahaha.

ReplyDeleteI make this weekly now but it feeds my hubby and I for three mornings. I use a boat load of spinach and no hash browns- although I will probably try it. I also use turkey bacon (cooked in the oven, leftover from weekend breakfast) or Aidells Chicken & apple sausage. I started buying my eggs at BJ's because I use a dozen in my recipe. I love it. It keeps me full for so much longer than a bagel would and I tend to use whatever veggies I have on hand. Its pretty versatile.

ReplyDeletei am pretty similar, i get in a rut with breakfasts but i don't mind that particular rut. i like to change up dinners, but not so much breakfast. this would be great to make for a bunch of people though, and pretty easy. plus, potatoes. always good.

Mmmm I do love a good breakfast casserole!!! I am one who has the same thing for breakfast over and over again as well so it is a treat to change it up.

ReplyDeleteI love how easy breakfast casseroles and quiches are...now cooking bacon adds an extra step but I'd do anything for bacon! I haven't made one in almost a year so now this will be on my weekend food prep list.
