One-ish pan chicken dish



I know, what's with the one-ish, right? Well, this is absolutely a one pan chicken dish unless carbs are your mistress, like me, then it's a two pan dish. It's a recipe that's like a Choose Your Own Adventure Book. You decide how this story ends!

Amanda shared this original recipe on the facespace, then I crapped it up because I didn't really read it all the way through. So I got the idea here and ended up with this. I was initially peeved because I thought fresh spinach would work better and I didn't have any, but I was happy with how this turned out with the green beans and it was easy. 

Ingredients
2 tbs extra virgin olive oil
6 small pieces of boneless chicken (thin cutlets would work well, I cut a few chicken boobs up and sliced them thin)
kosher salt + pepper
1/2 cup balsamic vinegar
2 cups grape tomatoes, sliced in half
2 cups green beans, steamed for about 3 min in the microwave (I used frozen, cleaning out the freezer)


Directions
Heat oil over medium high heat in a large skillet.

Season chicken with salt & pepper. Drop it into the pan and cook 4 min on one side and then three on the other. If you overcook it, it will be like eating a rubber ducky. No one wants rubber ducky for dinner.

I put a lid on at this point to reduce mess. To be honest, I rarely cook chicken on the stove top because it's a wretched mess and I hate it.

Anyhooooooo I put three pieces in, cooked them, removed them to a plate, then did it again with the other three pieces and removed them as well.

Pour balsamic vinegar in and watch it bubble like a witch's cauldron. Scrape the bottom with a wooden utensil. Add tomatoes and cook about 3 minutes, then add green beans and cook another 3 minutes. Add the chicken back in, remove from heat, and serve.

And if carbs are your mistress, try spooning it over whole wheat orzo. You won't regret it.

  4. I did something like this in the crockpot once. Balsamic does something amazing to chicken.
    And you could certainly switch up the pasta...maybe couscous.

  6. This sounds delicious. I've been using balsamic vinegar to cook or marinate lots of my meals lately. I love the flavor and you can really add almost any combination of veggies to this dish.

  8. Awesome haiku. Love the one pan everything together stuff. I am going to make that caprese chicken recipe that has been floating around. I have basil growing and I have the grape tomatoes and mozzarella. No one in this house ever knows what or when they feel like eating dinner. Jmj.

  9. one-ish is better than 3 or 4 ish! i am not good at cooking chicken on the stove unless i cut it up into smaller pieces. this really looks delish though. carbs are my one true love for sure.

  10. "Chicken boobs" still cracks me up. I'm a carb-aholic, so I'd definitely need that second pot, but I love how easy this is and the fact that I already have most of the stuff on hand. That's actually one of the main reasons I like your recipes- simple ingredients that I usually already have. Anyway, I'll have to try this one!

  11. I am all about the least amount of dirty dishes, so yay!!! I love chicken dishes and this one sounds yummy. I am a fan of balsamic vinegar as both a meat marinade and a salad dressing :) I always have a huge bottle at home!

  12. Looks delicious! I have a love/hate relationship with cooking chicken. It seems like I either end up with rubber ducky chicken or raw "let's kill Tanya" chicken. Sigh. I do better when I cut it into smaller pieces too. It seems like chickens are getting boob jobs these days because their breasts are huge! I am definitely going to try this and will absolutely include carbs because life without carbs is simply cruel.

  13. Yum! One of my biggest pet peeves with my husband is that he dirties up every pan in the kitchen when he cooks. I think this might be a recipe that we need to try because you only use one pan!

  19. Love this! When the BV reduced down did it get rid of some of the acidity? I love BV but my husband thinks it's too...well...vinegary. :) So, I wonder if cooking it down reduces that bitterness some? I could always add a little brown sugar too, I guess?
