Cilantro lime cauliflower



I will not attempt to insult you by calling this cilantro lime cauliflower rice, which is what a lot of the internets call it. It's cauliflower, scaled down to be rice-size, but it's still cauliflower. Not rice. Luckily I love cauliflower and it's good for you, so personally I find this to be a good side dish substitution for rice. It was a great accompaniment to some chicken marinated in lime juice, olive oil, salt and pepper, and ancho chile seasoning.

Ingredients
1 head of cauliflower
2 TBS butter
kosher salt + pepper
cilantro, chopped - I like a lot so I probably used more than 1/2 a cup
Juice of three limes

Directions
Pulse cauliflower in the food processor (or similar) in batches.

Steam in the microwave with butter for five minutes.

Remove, season with S&P, add cilantro and lime juice, and mix well.

  1. I really really really wanted to like cauliflower rice but I just cant. I hate cauliflower and no matter what I do to it or try to change it to be something else....I still hate it. lol. At least I eat my other veggies, right? :)

  2. Hahaha it is most definitely not rice. But I like cauliflower! My mom makes it for me which makes it extra delicious.

  4. This sounds like a great alternative to rice! We made "fried" cauliflower rice before and really enjoyed it, but I think that I'd like the cilantro lime flavor profile more!

  6. I LOVE cauliflower and always laugh when people have recipes with it but call it other things. Cauliflower pizza! Um, no. That ain't pizza. I appreciate it's the healthier version though, and this looks easy enough! I love cilantro too - I know a lot of people dont.

  8. I've always been intrigued by the cauliflower "rice" recipes, but this one sounds delicious (like the Chipotle rice flavoring). I love Cauliflower too, and am even making cauliflower sloppy joes this week!

  10. I just cant ever get the taste of cilantro out of my mouth once I eat it.
    it doesnt settle well with me.
    I do love me some cauliflower though - in so many shapes & forms.

  11. Um, I love cauliflower. And apparently I need to get myself a food processor.

    My husband would appreciate your honesty with veggie vs. rice. I once mashed up cauliflower and didn't warn him it wasn't potatoes. That night ended in conflict...

  12. mmmm this looks so good! i love that you don't call it rice. i love cauliflower, but have only ever made the 'rice' version once as fried rice, i didn't love it. perhaps i need to try a simpler version like this.

  19. ohhh I love that you made this, and I love your comment about the fact that it's cauliflower not rice. LOL. I tried to make cauliflower pizza crust once and it was a failure. I could give it a go again with this recipe! looks yummy!
