Ingredients
1 head of cauliflower
2 TBS butter
kosher salt + pepper
cilantro, chopped - I like a lot so I probably used more than 1/2 a cup
Juice of three limes
Pulse cauliflower in the food processor (or similar) in batches.
Steam in the microwave with butter for five minutes.
Remove, season with S&P, add cilantro and lime juice, and mix well.

Happy birthday to my brother-in-law Mark!
I really really really wanted to like cauliflower rice but I just cant. I hate cauliflower and no matter what I do to it or try to change it to be something else....I still hate it. lol. At least I eat my other veggies, right? :)
ReplyDeleteHahaha it is most definitely not rice. But I like cauliflower! My mom makes it for me which makes it extra delicious.
ReplyDeleteI've wondered about that. We'll see; it may happen as a side dish some night. Thanks for the idea!
ReplyDeleteThis sounds like a great alternative to rice! We made "fried" cauliflower rice before and really enjoyed it, but I think that I'd like the cilantro lime flavor profile more!
ReplyDeleteI love pulsed cauliflower & will try this recipe.
ReplyDeleteI LOVE cauliflower and always laugh when people have recipes with it but call it other things. Cauliflower pizza! Um, no. That ain't pizza. I appreciate it's the healthier version though, and this looks easy enough! I love cilantro too - I know a lot of people dont.
ReplyDeleteYUM! I like you think it's funny when it's called rice, nope it's a veggie!
ReplyDeleteI've always been intrigued by the cauliflower "rice" recipes, but this one sounds delicious (like the Chipotle rice flavoring). I love Cauliflower too, and am even making cauliflower sloppy joes this week!
ReplyDeleteYUM! I'm all about cilantro, and I love the substitution of cauliflower for rice making it a healthier side choice.
ReplyDeleteI just cant ever get the taste of cilantro out of my mouth once I eat it.
ReplyDeleteit doesnt settle well with me.
I do love me some cauliflower though - in so many shapes & forms.
Um, I love cauliflower. And apparently I need to get myself a food processor.
ReplyDeleteMy husband would appreciate your honesty with veggie vs. rice. I once mashed up cauliflower and didn't warn him it wasn't potatoes. That night ended in conflict...
mmmm this looks so good! i love that you don't call it rice. i love cauliflower, but have only ever made the 'rice' version once as fried rice, i didn't love it. perhaps i need to try a simpler version like this.
ReplyDeleteMy sister made something really similar to this last time I was home. So yummy!!!! I love cilantro and lime on basically anything.
ReplyDeleteCauliflower / rice
ReplyDeletethey both like to be buttered
but rice is boring
I love cauliflower . . . and I just ordered a Cuisinart so I'm thinking this is going on the menu!!! Yum!
ReplyDeleteSo this seasoning blend/method is also really good with rice ;)
ReplyDeleteLuckily I love cauliflower too and cilantro sounds like a nice touch. I haven't had my mashed cauliflower in a while. thanks for reminding me.
ReplyDeleteOh my gosh, I want this. Trader Joe's sells this bag of riced cauliflower that would be perfect for it.
ReplyDeleteohhh I love that you made this, and I love your comment about the fact that it's cauliflower not rice. LOL. I tried to make cauliflower pizza crust once and it was a failure. I could give it a go again with this recipe! looks yummy!
ReplyDeleteI make my cauliflower {rice} like this often. I have even used cauliflower as a taco meat substitute. :)
