Cold Taco Dip


Ingredients (can be halved and made in an 8x8 dish)
2 8 oz packages of softened cream cheese
16 oz sour cream
2 package taco seasoning mix (since I make my own, I use 6-7 tablespoons of that) *** recipe below
shredded lettuce (too lazy to cut it, I buy it like that and do a quick rough chop of it. 
sliced grape tomatoes 
sliced black olives
finely shredded sharp cheddar cheese

***Homemade taco seasoning
1 tbs chili powder
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp dried oregano
1/2 tsp paprika
1 tsp ground cumin
1/2 tsp sea salt
1/2 tsp black pepper


Mix together and use 3 tablespoons for a packet.  I typically make a large amount and store in an airtight glass container.

Directions

Cream together cream cheese, sour cream and taco mix. I do this in a mixer so I don't have to actually mix it but I did it by hand for years. 

Spread mixture in a 9x11 cake pan. 

Sprinkle with a bit of cheese, arrange tomatoes and olives to your liking, add some lettuce and some more cheese. Punctuate with tomatoes and olives. 

Serve with chips or veggies.  
My friend Melissa was the first person I knew to serve food at a party - she was doing it even when we were in high school and just wanted to throw down some gross beers we managed to secure from sources that shall remain nameless. The rest of us didn't really get the memo that a proper gathering has good snacks until years later. I always associate this type of dip with her.

This is legitimately one of the easiest apps known to man. Perfect to throw together quickly for a last minute gathering. You can add salsa, refried beans, taco meat, etc. to this dip to make it more complicated, but I like to keep it simple.

  10. I love this dip. I make mine with the cream cheese/sour cream/taco seasoning base, salsa in the middle and topped with shredded cheddar. YUM.

  12. these types of dips are seriously the easiest thing to make for a party, i love it. it always gets eaten as well! never have leftovers. i have never made it with cream cheese, will have to try!

    I always eat a dip that looks like this at gatherings as well! But I never knew what it was. Yum! This is dangerous information ...

  14. I make this frequently and it's seriously one of the best things EVER! I put ground beef cooked with taco seasonings and salsa in mine but I'm going to guess pretty much all versions of this are delish!

  15. Love the haiku. This dip looks pretty, too. I love apps better than the meal! Apps and dessert! On another note, I just tried a "green" protein shake again! EW! I just can't do it!

  18. I love taco dip. LOVE IT. I did it once in individual cups because I sometimes am an appetizer overachiever and also, double dipping makes me sick. I ate about 7 cups by myself. #noshame

  22. I make this as well and it's a huge hit! I'd love to know your recipe for taco seasoning. It's one of the things I'm cutting out (packaged seasonings) so I'd love to try my own. :)

  24. YUM. This is definitely a good one to keep in mind. You can usually count on me to show up with spinach and artichoke dip (SO GOOD) but I have to plan well in advance for that one because I don't always have all the stuff on hand, and I need the spinach (package of frozen chopped is where it's at) to thaw. This'll be a good one to have handy for last-minute needs!

  25. This was the first type of homemade dip I ever brought to a party! Because it's easy peasy to make, and delish! Such a simple recipe, and knowing it has the SMD seal of approval make me happy.

  26. I love taco tip, especially with those really good tortilla chips like they serve in restaurants. I feel like with the hot taco and layer dips you have to throw them out on the table as soon as they're cooked otherwise they're not as good when they get cold. I like how this is cold to begin with!

  37. Yum!! I use to make a variation of this dish all the time for parties too, I think we called it 7 layer dip or something. I have not had it in years, and now I really want it :) I always used refried beans. I also made a greek version once for a party. I used whipped, feta, hummus, olives, cucumbers, tomato and served with pita chips.

  40. This is just how my girlfriends and I make it, except for the olives, 'maters and lettuce... so basically just the shit that's terrible for you. Terribly GOOD. :) I could make a MEAL out of this!
