Krauty Chicken

This dish is super easy, cheap, and healthy. I typically make it on the weekend and use for leftovers during the week or make it one night to use for dinner the next since it has a long time in the oven. I serve it with a side of steamed broccoli or green beans. Original recipe from The Country Gourmet Cookbook, I made some alterations.

Krauty Chicken

Ingredients (serves 4)
  • 32 oz bag sauerkraut
  • 2 lemons
  • red pepper flakes
  • family pack chicken thighs
Instructions
Preheat oven to 375 and grease a 13x9 glass pan.
Empty sauerkraut into a fine colander and rinse with cold water.
Squeeze excess water from kraut and place in the bottom of the pan.
Sprinkle with red pepper flakes. I don't like a lot of heat so I add sparingly.
You can use whatever type of chicken you like. I used chicken thighs and removed the skin but left the bone in. You can leave the skin on if that's your preference. Place chicken on top of kraut.
Salt and pepper chicken, then squeeze the juice of two lemons over the entire dish.
Bake one hour and 20 minutes. Do not open the oven while cooking.

  5. I didn't used to like sauerkraut, but it's growing on me - to the point where this sounds delicious. I'll have to try this for one of my planned meals. It's definitely a flavor we don't have often!

  6. i love easy, cheap and healthy - KC would love this. I don't like spicy so I'd use the pepper flakes sparingly too. I have never had sauerkraut before so I am intrigued!

  10. lmfao healthy and gassy ey? I will try this since my bf loves sauerkraut :) It is really a super easy recipe so thanks for sharing since I've started cooking larger batches fewer times a week so there's always left overs. Will definitely try this out! Have a great one Stephanie :) -Iva

  11. I can't wrap my head around sauerkraut and chicken. Maybe I would try it with pork chops and sliced apples in the mix.

  17. Yum. I love me some meat. And since Ive cut a lot out of my diet, meat and veggies are mainly what I eat anyway so its nice to switch it up!
