Mimi's bacon breakfast muffins

Ingredients
1 lb bacon, chopped and cooked crispy
1 cup chopped tomatoes, seeded and drained
1/2 cup mayo
2 cups shredded sharp cheddar cheese
Worcestershire sauce to taste 
Pepper
1 package of English muffins

Directions
Chop and cook bacon until crispy. Drain and set aside to cool. Chop, seed, and drain tomatoes. Mix those two with mayo, cheese, Worcestershire and pepper. I like a lot of Worcestershire. 

I typically make up the mixture a day in advance, but you can certainly make the morning of. 

Preheat oven to 350. Split the english muffins in half and top each with about 1/4 cup of the mixture to start. If you have extra, go back and fill in.

Bake for 20 minutes and serve. For a super easy company breakfast, I serve with fruit salad. 


My good friend Mimi is a great cook and a recipe goldmine. She's also got a huge and generous heart, and we jokingly refer to her house as the home for wayward girls, because if something's wrong for you, she'll take you in and feed you like royalty. These muffins were our go-to girls weekend muffins after a night of debauchery at the bars in Federal Hill. They remind me of laughter and friendship and bonding over meals. 

These days my nights of drinking to excess are few and far between, but these muffins are still my go to when I'm hosting a bunch of people for breakfast or brunch. The mixture can be made a day ahead, so they're super easy to get out in a timely manner without taking too much time away from your guests. I prefer to have time to talk and linger over coffee on days like Christmas instead of being in the kitchen doing and missing out on time with my people.

  2. Those look so good! Any time you have bacon I am coming for breakfast! ;) I usually just do bacon and eggs, or pancakes. This is much easier.

  5. My favorites! I use probably half that amount of mayo, but I have yet to ever serve these and not have people go bananas over them. This is the kind of recipe kingdoms go to war to protect.

  17. Anything with bacon and I'm sold! I love to make overnight french toast if we are having people over for breakfast/brunch. I like that I can make it the night before and then just pop it in the oven in the morning. Simple is good.

  19. I need to store this in my back pocket because this past Christmas, I made waffles, eggs, and bacon while visiting family (7 adults, 2 kids). It took sooooooo long. It was 10am before we sat down. No one minded but I hated making people wait. THIS is much better. Thanks, Steph!
