Ingredients
family pack of chicken thighs, bone-in and skin-on
2 tsp garlic powder
1 tsp kosher salt
Barbecue sauce to your liking (1-2 cups)
Directions
Spray a small casserole dish with non-stick spray. Preheat oven to 350. Apply garlic powder and salt to both sides of chicken. I rub some of the garlic powder under the skin.
Cover and cook for an hour.
Remove from oven. Drain fat from the dish. Remove skin from chicken (make sure you get it off from underneath too). Put chicken back in the dish, brush with barbecue sauce, and cook for an additional 30 minutes.

ReplyDeleteNot liking barbeque sauce is just blasphemous. Sweet Baby Rays is a favorite around here. I think we currently have a bottle of each of the different varieties in our refrigerator. Sweet and spicy is pretty delicious.
ReplyDeleteThe grill is not bad at all. I used to be afraid of it and now I am the grillmaster. So easy and no dishes to wash!
I am not a big fan of barbecue sauce unless it is burnt onto the chicken, nor can I eat the thighs or legs- too much sinew-y stuff. I will try this with split breasts and under the broiler to crisp up the barbecue sauce.

BBQ sauce is one of those things I eat but I wouldn't say that I liked, so I don't think you're missing much. Perusal of your past posts and pinterest boards will likely be happening for me soon... I think it's time I attempt to embrace the kitchen. Slowly. And without touching raw meat. I'm with Kerry, I'm weird about eating meat off the bone!
ReplyDeleteI think I would put BBQ sauce on almost anything if I could! I prefer baking (or using the crock pot) when I cook chicken, so this looks like a great recipe to try out!

ReplyDeleteI am TERRIFIED of the grill. I will not light it, use it, or basically go anywhere near it. I do like this idea for chicken because it is so easy and seems like a great dish for a Sunday.
ReplyDeleteBaked BBQ chicken has always been a favorite of mine but actually haven't cooked it in a few years. Sweet Baby Rays is the only BBQ sauce I buy. It's definitely the best in my opinion.

I'm a scaredy cat too when it comes to the grill... I don't know what it is but I can't work that thing to save my life and my husband can't cook in the kitchen. So it all works out I guess :-P

ReplyDeleteMy husband and I are super picky about BBQ sauces. There are so many different ones. There is this place in Texas called Rudy's. Their BBQ is awesome. Has a little kick to it, so they also have Sissy Sauce! If you ever come down south, definitely check out Rudy's! And thank for the recipe. SO easy, I think I can do it!! And make it taste good! Haha
