Vote. And eat eggs. Those are the messages for today.


It's voting day in many states today. You bet your sweet ass I am at the polls every election day - major, minor, mid-year, primary. If your state votes today, be at the polls. Many people have fought for your right to vote. Don't squander it. And if you don't vote, never ever complain about anything in this country. Ever again.

Now then. Eggs.
Most of my days start with them. I need protein in the morning or I am a major asshole by 11 a.m. My go to breakfast is eggs because they're easy to make, easy to transport, and they reheat well in the microwave at work. They're an integral part of my weekly food prep.

Sometimes I scramble them with cheese and veggies, sometimes I make egg salad, but most often I make egg muffins. I use a Pampered Chef brownie pan to do this, but a regular cupcake pan is fine. The magic of these muffin eggs is that you can put whatever you want in them. I've used ground turkey taco meat, tomatoes, cheese of all kinds, broccoli, mushrooms, ham - they hold it all. This week I used breakfast sausage and cheese.
Ingredients
Yields 12 muffins
11 eggs
1/2 tsp sea salt
1/4 tsp ground mustard
1/4 tsp garlic powder
1 tbs milk or cream
1 pound breakfast sausage, browned (you will only use half)
Cheese - I used gouda

Directions
Preheat oven to 350.

Cut cheese into pieces - I usually put three small pieces in each muffin slot. You can add more or less.

Brown sausage. Drain and allow to cool, then add to muffin slots by the tablespoon, about a tablespoon and a half in each. I eyeball it.

Beat eggs with spices and milk. Make it easy on yourself and do this in a large measuring cup that has a spout so it's easy to pour.

Pour eggs over your sausage and cheese add-ins.

Bake for 30 minutes.

Easy peasy protein yeezy. Pack those sumbitches up and you have breakfast made for the week.

I froze the other half of the cooked breakfast sausage. BOOM. Already one step ahead for next time.

  1. yes girl; yes...i never used to vote but then started just so i could reserve my right to bitch and complain all the live long day about how stupid the government is being. right now, our alcoholic racist mayor (this has been proven btw) is under fire because he's caught in some crack-cocaine smoking, hanging out with drug dealers and possible murderer scandal and guess what? YOU BETTER BELIEVE I'M MAKING FUN OF HIM AND MOCKING THE SHIT OUT OF HIM ALL DAY ERRYDAY because i voted AGAINST him.

    now the eggs. those wonderful egg muffins that i love so very much. i toss in some chopped broccoli and shredded Parmesan cheese and it's like heaven in my mouth! such a great way to grab bfast when you're in a hurry!

  3. Vote..vote...VOTE!! My grandmother, who was a Polish refugee, shamed me into voting when I was 18. We were talking about politics and I said, "Grandmom...won't make a difference with one vote from me. Our government is a huge machine..out of touch with it's citizens". Wow, was she pi$$ed! "Papa and I did NOT escape to this wonderful country to hear such garbage!" (thick Polish accent) I've voted ever since.

    Breakfast food.. winter is oatmeal (I make my own "instant") or whole grain toast w/ peanut butter. Summer is a protein drink w/ fruit in it, or an egg scramble.

They are deciding the fate of the Astrodome today (aka "The 8th Wonder of the World," which has been sitting, unused, for nearly a decade) and I don't know if I can vote on it or not since I live in the 'burbs so I'm a little bitter. But I will probably find my polling place on the way home. Also, I love today's haiku. Probably my favorite so far!

  13. Voted early this morning. The 3 elderly women working the polls have been there forever & it's always like Who's on first EVEN tho we handed them our licenses! JMJ!
    Anyway, happy to have been Born in the USA! Will need to try those egg muffins, protein is what I need, too. My go-to breakfast used to be
    Instant breakfast. Had a protein shake this morning. And my vitamins, of course.
    May all those elected into office today be good, not greedy, not bribed, etc. #DOTHERIGHTTHING

    Yummy yummy egg muffins. I made an egg bake for the lupus loop after party very similar! But I used pre-cooked Jimmy Dead sausage crumbles :-)

  16. Egg muffins need to be a part of my life. I need to change up the smoothie situation because my body is used to it and I was going to try egg-beaters but I don't have extra time in the morning. Thank you for solving my problem for me :)

  19. I've made some of those before, but I used: hash browns, eggs, cheese, and bacon.

    My go to breakfast, even though I don't have it that much: eggs, bacon, hash browns, biscuits, and pancakes. All of it. So yummy!
