Meatloaf beatloaf I...love meatloaf

Similar to when he said, "Daddy's gonna kill Ralphie," Randy was wrong about meatloaf. Meatloaf may be my number one favorite comfort food. I love it out of the oven and I love it cold.

My basic meatloaf recipe is very simple, but some Sundays call for the big mama meatloaf and that was this Sunday. When I want to be a fatty, I use the Pioneer Woman's meatloaf recipe as a guide. This leaves a lot of leftovers, so if you are not feeding a crowd or interested in leftovers, you should halve this recipe.
Ingredients:
2 lb ground beef
6 slices white bread (I used whole grain white, you can use what you have)
1 cup milk (I used 1/4 cup fat free half & half and 3/4 cup 1%)
1/2 teaspoon seasoned salt
1/2 teaspoon regular salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
3/4 cup shredded cheese of your choice
1/4 heaping cup parmesan cheese
ground black pepper to your liking
1/2 cup minced flat leaf parsley
4 whole eggs, beaten
10 slices regular bacon (don't use thick cut)
1 cup ketchup
4 tablespoons brown sugar
1 teaspoon dry mustard
Sriracha (squirt or to your taste)

Directions:
Preheat oven to 350 degrees. 
Put your bread slices in a large mixing bowl and pour the milk over them. Allow to soak for a few minutes. I use this time to deal with the parsley and gather the rest of my ingredients. I also get out my broiler pan, line the bottom with foil, and spray the top with nonstick spray. I set this next to my mixing bowl. Using the broiler pan allows the fat to drip through.
When you're ready, add parsley, ground beef, cheese, spices, and lastly eggs to the mixing bowl. In a separate bowl, combine ketchup, brown sugar, dry mustard, and sriracha and mix well. Set aside. 
Wash your hands, dirty friend. You're mixing this meat mix beeotch by hand until well combined. Place it on the broiler pan and form into a loaf. 
Top it with bacon slices, tucking them under on the sides and overlapping them just a little.  Pour a third of the sauce over the top and spread it with a spoon. 
Bake for 45 minutes, then pour another 1/3 of the sauce over the top and spread. Bake for another 15 minutes. 
We serve our meatloaf with mashed potatoes, corn and green beans.

  2. i'm going to show my true asianess but i have never had meatloaf. please don't unfriend me. which is weird considering i'm the biggest non-asian asian you'll ever meet. i blame that on my mother who only cooks asian food.

  3. I LOVE meatloaf, but Dan does not. So...I make my recipe (similar to yours), make hamburger size patties and then fry in a cast iron pan. He thinks they're hamburgers and I get my meatloaf. He has not clue and tells everyone how delicious my "hamburgers" are..lol Love cold on whole grain bread with grainy mustard.

    Question: unless I'm missing something, you only used 2/3 of the sauce. What happens to the other 1/3?

  8. I do love me some meatloaf. This recipe has a lot of ingredients! I just toss together ground beef, bread crumbs, an egg, onion, green pepper and ketchup. Does that make me lazy? Probably. Maybe one day I will get fancy and try yours!

  11. I love meatloaf, but Shawn isn't a fan. I improvised a turkey one last winter that was really tasty, with Missle Eastern spices and lots of veggies in it to keep it moist.

  13. Ma, the Meatloaf! LOL Both your brothers say that to me and both call me Ma. Sean sometimes calls me Mother, like you do. Anyway, Grandmom made really good meatloaf. I always deferred to her and never got her recipe. Darn it! I like Judy's idea of making meatloaf hamburgers!
    Always learning something. Every.Single.Day.
    This weather makes me Love to cook!
    I will add that to my very short list of what I like about cold weather.

  16. LOVE meatloaf. I just started making it a couple of years and used (and still using) a recipe that I found behind a box of bread crumbs. For some reason, my mom never made meatloaf... never had it as a child. This recipe has many ingredients that is not included in mine. I will give it a try!

  17. OMG, I hate meatloaf. It's nothing but a giant meat brick and my parents used to force feed it to me and my sister. I'm still scarred.

    That said, Paradise By the Dashboard Light is one of my favorite songs and Meat Loaf the singer is pretty great. I had also read that he's a vegetarian.

    It confuses me, too.

  26. P-Dub's meatloaf is the only meatloaf that I will make or eat. I use a combo of ground beef & ground pork. I think it adds a little je ne sais quois.
