It couldn't have been easier to prepare, and it was mildly healthy to boot. Even better, you can make it healthier if that's your bag.
Ingredients
3 bags frozen cauliflower (you can use fresh, I had frozen on hand)
about 1/2 cup of cooked, chopped bacon (more or less to taste)
1/4 cup sour cream
1 bunch green onions, chopped
1/2 cup shredded sharp cheddar cheese
3 TBS butter
1/2 tsp kosher salt
1/4 tsp white pepper
1/4 tsp garlic powder
1/4 tsp onion powder
Directions
Put cauliflower, sour cream, butter, salt, pepper, garlic powder, and onion powder in a large bowl. Using an immersion blender or potato masher, mix and mash. I used the immersion blender and left my cauliflower a little chunky, because I like it like that. Divide among containers if using for lunch.
Top with bacon, cheese, and green onion. If serving right away, throw it in the oven for a few to melt the cheeses. Otherwise, pop it into the microwave at lunch and enjoy!
And hey - thank a veteran - today and every day.
What's your favorite healthy-ish lunch?

I am so making this. I love cauliflower, a staple when I am really hard core paleo. And what a great way to meal prep a whole bunch of lunches at a time! Thanks Steph!

ReplyDeleteI do love cauliflower, but was this stinky the next day? I feel like any time you make cauliflower, it starts to smell the next day even if it is still good. Did your coworkers hate you? Lololol.
ReplyDeleteI love subbing cauliflower for potatoes, and this looks delicious!
ReplyDeleteThanks to all the Veterans! I set my intention on the 11-11-2015 day of the New Moon for peace and love and prosperity and serenity and happiness to all veterans and those still serving and their loved ones. Let not one be homeless or poor or untreated for anything related to serving their country. Let them enjoy the life -long benefits of the Congress who sent them to war. Thanks to the Universe for making this happen!!

ReplyDeleteI keep pinning cauliflower recipes because I tell myself I should really make it a point to eat more of it, but then I always forget when I go to the store. This looks so good though. Ohhhh this is a brilliant idea!
ReplyDeleteThat's a great idea! Have you ever riced cauliflower? I'm intrigued.
ReplyDeleteGod bless our veterans, indeed!
These look wonderful!!!
ReplyDeleteThink it would be good w/o bacon? I loved loaded baked potatoes w/o bacon because duh, sour cream & cheese. Maybe we'll check this out. Now that I have an immersion blender, there's no stopping me.
ReplyDeleteI don't like cauliflower, but I've never actually made it all mashed up or as a pizza crust. I definitely need to try this! There's so much else going on, I'm sure it's good.
ReplyDeleteI love cauliflower! This sounds delicious!!!!!
ReplyDeleteIf I use plain greek yogurt instead of sour cream, then I think it really is super healthy. Will give this a try, thanks!
ReplyDeleteDoes it have a loaded baked potato flavor to it?
ReplyDeleteOh yum! I will definitely have to try this soon!
