Ingredients - this made about 90 taco cups and I used leftovers for taco night later in the week. Ole, mofos
1.5 lb ground turkey, beef, or chicken (I used turkey)
2 packets of taco seasoning (or equivalent of homemade seasoning)
grape tomatoes, sliced
sliced black olives
finely shredded cheddar
sour cream
Scoops tortilla chips - I used multigrain and regular

Directions
Brown your meat. Add taco mix according to directions (drain meat, add mix and a little bit of water, let it simmer for a bit).Let meat cool.
Fill scoops with a bit of meat. Top them with some cheese. Add a dollop of sour cream - I like to use a little piper. Even though you have to keep filling it, it was the easiest way for me to do it.
Top with tomato and black olive and serve.
I would not make these ahead of time. An hour or so before serving is good. I've seen people use salsa, but it soaks the chip a little and makes them soggy. They're totally fine to serve at room temperature. If I wasn't transporting these, I probably would've added a little lettuce to these too. I didn't know how they'd survive the ride.

ReplyDeleteThose look really good. I love anything with sour cream. My app game can be pretty lame. I usually do those Caprese skewers that are in one of your pictures. My mother makes this amazing eggplant bread...it's like a stromboli but with eggplant instead of meat. She makes it from scratch and cuts it up for an appetizer. It's SO good!

ReplyDeleteDefinitely going to try these for a football sunday appetizer. I love doing crockpot meatballs with grape jelly and chili sauce. Old school but whatever! They are good!
ReplyDeleteRandom, but I notice this because I'm an olive hater - how come taco-esque foods, like your taco cups or seven layer dips always have olives yet I have never seen anyone put olives in tacos, ever? So weird. Probably because olive lovers look for any excuse to add olives to things. I would just swap them for some avocado and be perfectly happy.

ReplyDeleteAnyway, they look awesome, and look like something even I can manage to not fuck up. My favorite single serve app is a cherry tomato, mozzarella ball and a piece of basil on a toothpick, then drizzle olive oil on the entire dish. YUM!!!!
mm these look so good. i agree with lauren haha, i hate olives and have never seen anyone put them in tacos. interesting. the salsa is good, but definitely not something you can make before - i suppose you could add the salsa right before eating but then you're basically just eating chips and salsa, not that there is anything wrong with that. mm chips and salsa. the piper thing is SO smart.
